If you ask most people what their favorite cuisine is, I would venture to guess that quite a few of those answers would be Italian. My husband and I are not an exception. We very much enjoy Italian food, especially the staples of pizza, spaghetti, and lasagna.
For a while, lasagna was not on my dinner rotation list, however, one of my wonderful friends and college roommate sent me this recipe for smaller lasagna for two, and I quickly made room for it in my dinner planning sessions. The reasons it was absent for so long was for two reasons: it involves more time to prepare than spaghetti and gluten free lasagna noodles are hard to find.
The former issue was solved by the easy, but yummy recipe and the latter solved by these noodles I found at my local neighborhood Wal-mart for around $4. I especially appreciate that they are oven ready because it saves on the commodity I have the least of – time.
Because these are oven ready, you simply skip the instructions to cook them before layering all your ingredients. They will cook in the oven with the rest of the lasagna.
I keep the recipe shared above as is except that I do layer all the ingredients — sauce, noodles, cheese mixture, sauce, noodles, cheese mixture, etc, instead of just one layer of each as the original recipe instructs.
The Verdict: Delicious! I’ve used other gluten free lasagna noodles before, and while they were good, I did notice a difference with these ones. They were much more authentic tasting and absorbed the flavors of the dish well. The best part? Even if this is a smaller lasagna, it still provides us plenty of leftovers for lunches.
A delightful Italian gluten free dinner for two? Yes, please 🙂
